• 1/3 cup maple syrup
  • 1 tablespoon spicy brown mustard
  • 1/4 teaspoon salt
  • 1/4 cup bread crumbs
  • 4 pork loin cutlets, thinly sliced
  • 1/4 teaspoon black pepper
  • 2 teaspoons olive oil 1/2 cup NC apple cider
  • 2 medium NC Golden Delicious apples (cut in 16 wedges)

In a small bowl, stir mustard, salt, pepper and bread crumbs together. Place mixture in a plastic bag, add cutlets and shake to coat. Heat oil in a frying pan over medium heat. Cook pork 2 minutes each side until golden brown. Add cider and apple wedges to pan. Bring to a boil, reduce heat and let cook for 5-7 minutes (uncovered) until pork is done. Stir in maple syrup and cook 5 more minutes or until pan juices are thick. Remove and serve.
